Home Style Chicken Vegetable Soup
Serves ~4-6
1-2 tbsp extra virigin olive oil
1 medium onion, diced
3-4 cloves garlic, crushed
1 tsp thyme
2 large chicken breasts, cut into chunks
3 large carrots, diced
4 celery stalks diced
2 bell peppers (orange, yellow or red), diced
1 large zucchini, diced
2 large red or yellow potatoes, diced
4 cups vegetable stock
1 tsp sea salt
1 tsp pepper
½ cup fresh parsley
(Feel free to add more of your favourite veggies to this delicious dish!)

- Heat a large skillet over medium heat and add olive oil. Add diced onion and sauté until soft, about 5 minutes. Add garlic, thyme and chicken breasts; sauté a few minutes more. Then add carrots, celery, potatoes, pepper, zucchini; sauté a minute more.
- Transfer the chicken/vegetable medley into a large pot. Add the vegetable broth and mix well. Cover and simmer for about 20-25 minutes.
- Add parsley and simmer for 5 more minutes. Add sea salt and pepper to taste.
